Ideal for all whites especially Pinot Gris and Sparkling Base. Cold
whole bunch press on white varieties is great for low phenolic
extraction and reduced free-run juice oxidation. Wines are softer and
fresher.
Coolroom allows us to chill all fruit prior to ferment which means
red ferments do not have to start hot and can even be chilled for cold
maceration pre-ferment.
Reds can be warmed through MLF to finish before spring. This means
reds can be sulphur corrected sooner.
Bottling. Small batches of suitable wine styles can be bottled
on-site.
