Coolroom allows us to chill all fruit prior to ferment which means
red ferments do not have to start hot and can even be chilled for cold
maceration pre-ferment.
Reds can be warmed through MLF to finish before spring. This means
reds can be sulphur corrected sooner.
Bottling. Small batches of suitable wine styles can be bottled
on-site.
